Stuffed tomatoes with green peas

Suitable for vegetarians


This works well either as a standalone first course or as a side dish with roast meats at a barbeque.


Ingredients - Serves 4 Adults

  • 4 large tomatoes
  • 1 small onion
  • 1 teaspoon olive oil
  • 250g / 9 oz. of frozen peas, defrosted
  • 1 handful of chopped parsley
  • Fresh ground black pepper, to taste

Method

  1. Wash and dry the tomatoes
  2. Slice off the top of the tomatoes with a sharp knife
  3. Remove the core and seeds with a small spoonFinely chop the onion and add to a frying pan with the olive oil
  4. Cook the onion until it goes soft, then add the peas and parsley
  5. Cook for a further 2 minutes
  6. Once the mixture has cooled, put it into a blender or food processor
  7. Put the mix into the tomato skins with a spoon
  8. Cover the tomatoes with tin foil and place on the barbeque for around 15 minutes

Serving Suggestions

This dish is a perfect accompaniment for a meat or fish main; try steamed fish or grilled chicken
