Chargrilled veggie kebabs

Suitable for vegetarians, this is a tasty option to serve as a side dish or main at a barbecue.


Ingredients - Serves 4 Adults

  • 50g / 2oz ciabatta, chopped into large pieces
  • 1 pepper, cut into large pieces
  • 120g / 4oz halloumi cheese, cut into large pieces
  • 1 courgette, peeled into ribbons
  • 180g / 6½ oz mushrooms, halved
  • 2 onions, cut into thin wedges
  • 1 fresh chilli, chopped finely, optional
  • Zest of 1 lemon
  • 2 tablespoons of olive oil
  • 2 sprigs of fresh rosemary, chop leaves finely
  • 200g / 7 oz tomatoes

Method

  1. Soak 12 skewers to stop them from burning on the barbecue
  2. Place all the vegetables into a large bowl, along with the chilli, lemon, rosemary and olive oil
  3. Mix everything in the bowl
  4. Leave to marinate in the fridge
  5. Thread the ingredients onto the skewers and place on a tray
  6. Place the skewers on the barbecue and cook for around 8 minutes, until cooked through, turning every 2 minutes to ensure all sides are golden

Serving Suggestions

Alternatively, halloumi can be swapped for another vegetable of choice or protein source such as chicken or beef
