Banana and walnut loaf

This bread is a sweet treat with some unexpected twists like its rich and nutty flavour courtesy of the banana, honey and walnut.

  • 2 teaspoons of baking powder
  • 4 medium ripe bananas
  • 50g / 2 oz. of chopped walnuts
  • 1 medium egg

Method

  1. Preheat the oven to 180°C / 350°F / Gas mark 4
  2. Beat the egg and add to the margarine and sugar in a large mixing bowl
  3. Sift in the flour
  4. Whisk the mixture quickly
  5. In a separate bowl, mash the bananas with a fork
  6. Add the bananas and the walnuts and mix again
  7. Put the dough into a loaf tin and smooth off the top
